Recruitment Phase

The first step in building a reliable sensory panel is careful recruitment. This phase covers what trained tasters do, how to identify and recruit potential panelists, and the essential do’s and don’ts for panel management. It also addresses ethical considerations, such as obtaining consent, and guides you through pre-screening to ensure candidates have the sensory acuity and motivation needed. You’ll learn how to determine the optimal number of panelists and identify the ideal candidates for a high-performing panel.

Training Phase

Once recruited, panelists must be trained to evaluate products consistently and accurately. This phase explores the objectives of training, highlighting the differences between trained and untrained panels. You’ll learn how to develop key descriptors and a consistent sensory language, familiarise panelists with characteristic products, and apply methods like check-all-that-apply (CATA) to detect off notes and uncharacteristic flavours. Various training methods and session types are covered, with guidance on reinforcing flavour training and ensuring panelists can reliably communicate their sensory observations.

A trained panel is only as good as its ongoing reliability. In this phase, you will learn how to screen panelists for accuracy and consistency, and implement processes for continuous development and proficiency validation.
